In general, the increased health risks associated with the transfer of foodstuffs mean that this particular type of ship is subject to ad hoc regulation. These vessels are frequently subjected to strict controls to ensure that they are suitable from a regulatory point of view.
As is well known, the decomposition process of organic substances is activated by heat. For this reason, the cargo holds of this type of ship are lined with multiple layers of thermal insulators, which partially limits the space available.
There are also ships known as reefer containerships, i.e. modern ships capable of transporting cargo in refrigerated containers.
